Healthy Bran and Raisin Bread

Today I am going to share with you one of my favourite breakfast recipes. I love baked goods for breakfast. I know it is not always the absolute healthiest choice available, but nonetheless, it is my favourite. So I try to make it as healthy as possible because as Christians we also have a responsibility to look after our bodies as best we can here on earth.

I love to bake and try new stuff in the kitchen. It is one of the things that relaxes me and I love making things for my family and they, in turn, love to eat! So here follows the recipe:

Ingredients:

1 cup soft brown sugar

½ cup sunflower oil

2 extra large eggs

1 teaspoon salt

2 cups bran

2 cups of milk

2 teaspoons bicarbonate of soda

1 cup seedless raisins

2 ½ cups white flour

Method:

Preheat the oven to 180 degree Celsius. Grease a large loaf baking tin.

Mix brown sugar and sunflower oil, eggs and salt together, beating well. Stir in the bran. Add the milk (into which the bicarbonate of soda has been dissolved) and the raisins. Add the flour and stir until just mixed. Pour batter into the baking tin. Bake for about 20 minutes on 190 degrees Celsius, then lower heat and bake for another 20 -30 minutes on 160 degree Celsius until done. Allow to cool down a bit until at least lukewarm before cutting and serving. Yummy with butter, cheese or jam.

Tip: If you don’t want a loaf you could pour the batter into muffin tins and make muffins instead. Bake for 20 minutes on 180 degree Celsius then.
